Pear + Avocado Salad

Since summer is right around the corner, I found it fitting to share one of my all-time favorite salad recipes.  I'm not always on point when it comes to creating salads, but I have to say that this one is definitely my best.  Heavy & thick salad dressings were never my thing {since most mediterranean/arab dressings are just lemon + s&p} so I used a few other light liquids to make a perfect dressing for some of my favorite salad components.

For the Salad; Layer:
1 head of lettuce, chopped
5 oz. Gorgonzola Bleu Cheese
3 ripe pears, diced
2 avocados, diced

For the Dressing; Blend:
1/3 cup of olive oil
4 TBS red wine vinegar
1 clove of garlic
1 1/2 tsp of yellow mustard
1 1/2 tsp of sugar

For the Topping; Heat on Stove:
1 cup of pecans
1/2 cup of white sugar
*When coated, transfer to parchment paper & cool before putting on salad!
